4 cups potatoes peeled and diced
2 1/2 quarts chicken broth
1 cup thin noodles, cooked and drained
1/4 lb thick bacon diced
1 cup chopped onion
Salt and pepper
Method:
- Fry bacon and onion, add chicken broth, add potatoes.
- Cook until tender and then add noodles.
- Simmer for 10minutes and serve.

I love this kind of potato salad, I enjoy the traditional more often, but this one is a welcome surprise at picnics too.
